I recently gave an interview regarding Culinary chefs versus Home chefs. I realized that I never really thought about this until the question was asked. Other than a food safety certification, I never went to school let alone a cooking class! It's not that I am beyond that, I look at cooking as an art. My food to my soul. No one can teach you that. I have to say, I have watched enough hours of cooking shows to learn a thing or two about techniques and styles and I'm STILL learning something new everyday. Someone told me that you cannot put yourself in a box with every aspect of your life. You cannot put a label on yourself. Otherwise, you limit yourself to a world of possibilities. That was so meaningful to me. With cooking, I never follow a recipe. I am always adding things and changing it around. The joke around my circle of friends is that every dish I make never come out the same. It's always delicious, they say, but it's never the same. Just like an artist can't truly duplicate a piece of art, otherwise, it will just be a mass print of something. I can never remember to write recipes down either, which doesn't help. So when someone will ask me about a recipe, I'm always worried that I can't come up with one. That's another thing about teaching. You really can't teach anyone taste or how it should taste. You can follow a recipe to the tee and it still won't taste right. Home cooks follow palettes to cook with. I call that million dollar palettes. My partner Beth has that. She adds the umami in our cooking. Which she plainly translates to LOVE.
I know a thing or two about love. I've been lucky enough to experience it. Its deeper than oceans and higher than the skies. But also hurts the same. It's what inspires me to create and follow my passion for the same love of cooking and food. Its what's in my core being, from memories of my grandma in the kitchen cooking an 8 course meal, to my father preparing a feast for a Sunday lunch, high school friends sharing hopes and dreams of the future and an unforgettable night with a love beneath the stars. A direct relation to what excites me about cooking. LOVE.
Enough about that. I hope that everyone follows our life journey that's all about how we are in love with food and how it makes people feel. Our goal is to do just that. Create dishes that hug people and make them feel like everything will be okay no matter what.
